As a by-product of how our bodies use oxygen, highly reactive forms of oxygen called free radicals are produced. In addition, thousands of environmental pollutants are free radicals as well. A free radical is a molecule that has an extra negative charge. This unbalanced electrical charge causes it to attach to neighboring molecules as it tries to get back in balance by stealing an electron for itself. In doing so, free radicals create additional free radicals. When out of control, free radicals attack the structure of our cells creating such metabolic waste products as lipofusions, which can destroy vital enzymes and interfere with our production of DNA, RNA and other vital proteins. Free radical destruction can accelerate aging of our cells. Free radicals also attack collagen and elastin, the substances that keep our skin and other organs moist, flexible and elastic.

Think of free radical damage as excessive oxidation - the same process as rusting. In a sense, the aging process is similar to the rusting away of metal. It is now believed that the cellular damage caused by free radicals is the main factor in the aging process. So it makes sense that to fight accelerated aging we must control free radicals.

Naturally occurring antioxidants in our diet protect us from excess damage from free radicals. Researchers now know that thousands of phytonutrients and antioxidants that protect our cells from free radicals are contained in fruits and vegetables. It is important that we consume adequate amounts of them on a regular basis. But if our diets are deficient in them, accelerated aging can take place.
