Most people eat very little raw food today, or it's cooked to the point that many of their enzymes, vitamins and valuable phytonutrients have been altered or destroyed. In addition, many foods are processed, made from processed ingredients.

The variation in the distribution of essential minerals in the soils of different geographical locations is a problem today. So, the foods grown on these soils may contain less levels of the nutrients as before. Researchers at Harvard University published a study in The Journal of The National Cancer Institute involving over 33,000 men that higher selenium levels were associated with significantly improved prostate health. Doesn't it make sense that there may be some relationship between a lack of nutrients in our diets and our level of health?

Many fruits and vegetables have been genetically engineered to look pretty and have extended life on grocery store shelves rather than on improving nutritional value. Did you know that a bowl of spinach contained about 150 mg of iron in 1948, and today the same size bowl only contains 2 mg. As a mater of fact, the Nutrition Review Journal reported that it is impossible to obtain sufficient nutrients from our modern food supply.
